I never knew that eevee can only evolve into three pokemons when it can actually evolve in to seven.

Actually Vaporeon, Jolteon, and, Flareon are the only pokemon that could evolve from Eevee until Gold and Silver, which introduced Espeon and Umbreon. Diamond and Pearl introduced Leafeon and Glaceon
